What are the ratios?
Fresh : active dry : instant = 1 : 0.4 : 0.33. E.g. 25 g fresh ≈ 10 g active dry ≈ 8.3 g instant.
How to use them?
Active dry is rehydrated in a little warm water (~35 °C); instant is mixed straight into the flour.
Does rise time change?
Slightly: instant acts a bit faster. Watch the dough volume (doubled) rather than the clock.
